Although his bakery stand is new, Daniel Frederick still employs traditional techniques in crafting his delicious cassava bread. Fresh ground manioc is mixed with coconut, sugar and water to form a dense, flat bread similar to a thick pancake. The coconut and sugar add a touch of sweetness that makes this bread addictive.

The bakery is over in the Kalinago Territory on the east coast, so it's a bit of a trip if you're staying in Roseau. But if you're visiting the Kalinago Village it's worth a stop, and you can also hit it up on your way to/from the airport. I'm not sure that I pinned it just right, but any of the locals could quickly point it out.

"Overall we loved it, though it would have been good to know that you can't drive to the hotel if you don't have a proper 4WD as it is located at the end of a long and steep tarished road. Luckily the hotel offers an transport service for the dirty road between 8am and 5pm. They also offer food(preorder only) and drinks at the bar. The staff was very nice and always helpful. "My two adult children and I enjoyed a comfortable stay in two private bedrooms of the home of the gentleman that owns and lives in the advertised property. He was a kind host, graciously welcoming us when we arrived far too late in the evening and waking before 5am to see us off for our early morning departure.
